The Best Creamy Mashed Potato

4 serves

INGREDIENTS:

1kg Thomas Farms Nectar potatoes
200g salted butter
200ml pouring cream
100ml full cream milk
Salt and ground white pepper to taste
1 pinch nutmeg (optional)
Chives for garnish

DIRECTIONS:

Place the whole, unpeeled potatoes into a large pot and cover with cold water.

Place the pot over a medium heat and cook until soft when tested. Remove pot from heat, strain potatoes, when they’ve cooled a little you will be able to easily peel the skin off.

Using a potato ricer or mouli, push the cooked potato through to create a very fine mash. You can also a use a conventional potato masher, but it may take a little longer to achieve the same result.

Add the butter, cream and milk, season to taste, and stir the mash until it is soft and the butter melts with a soft creamy consistency. Stir through the nutmeg if desired. Served with snipped chives to garnish.
