Here’s a delicious recipe using potatoes from Thomas Foods International Fresh Produce.

Tri-colour Potato Salad

with garlic vinaigrette and herbs

Serves 4 | Cooking time: 15 minutes | Preparation time: 15 minutes

INGREDIENTS:

1kg tri-colour potatoes
½ cup extra virgin olive oil
juice of 1 lemon
1 tbsp Dijon mustard
2 cloves garlic, crushed
1 tsp sea salt flakes
½ tsp ground white pepper
2 tbsp flat leaf parsley, chopped
2 tbsp fresh chives, finely chopped
1 tbsp fresh dill leaves, chopped
1 tsp fresh lemon thyme leaves
2 spring onions, finely chopped

DIRECTIONS:

1. Cut the potatoes into halves or quarters. Place into a large pot and cover with water.

2. Place over heat and bring to a gentle boil, continue to cook for approximately 10 minutes or till fork tender.

3. Meanwhile prepare the vinaigrette dressing. In a large jar add the olive oil, lemon juice, mustard, garlic, salt and pepper. Shake to combine.

4. When the potatoes are cooked, drain and toss with the prepared dressing while hot.

5. Allow the salad to cool a little before tossing with fresh herbs and spring onions.
